The Chef De Cuisine assumes the day to day responsibility for food operations under Blair Dining which includes commissary production, self-branding concepts located at various location on campus. Responsibilities include preparation, presentation and budgeting while ensuring the highest level of quality standards and health and sanitation practices. Oversees all aspects of food production. Assure that each concept is operated in a fiscally prudent manner by the records to assuring purchasing, storage and inventory controls are in place. Hires, trains and supervises kitchen staff. Utilizes food management inventory systems for standardization. Ensures that all recipes, food preparation and plate presentations meet specifications. Performs management duties in the absence of the Unit Manager. Able to lift up to 50 lbs. Other duties as assigned. This is a Monday - Friday 6:00 a.m. - 3:30 p.m. position, but may require weekend or late night, depending on the circumstances surrounding the various food operations. Will work around large food service equipment, hot surfaces, steam and slippery floor conditions. Job does require being on feet for 8-12 hours depending upon the day. Minimum qualifications: High School/GED and eight years of experience which includes supervisory or management experience. OR four years culinary experience which includes supervision and management, in combination with a Bachelor's degree in Hotel/Restaurant Administration or Culinary Management. Valid Driver?s License. Servsafe Certification. Excellent culinary skills. Extensive knowledge of food handling and sanitation standards. Experience in high volume operation and menu composition. Strong problem-solving and analytical skills. Good communication skills. Strong organizational skills. Knowledge of purchasing; inventory controls, supplies and equipment. Prefer candidate with Bachelor degree in HRAD, Business, Culinary or related in combination with four years culinary experience which includes supervision and management.
